DETERMINANTS OF CONSUMPTION OF FISH AND FISHERY PRODUCTS

Nowadays, it is observable that fish consumption habits and the factors determining consumption are continuously evolving and changing due to globalization. In recent years, due to the accelerated pace of the world and the global spread of pandemics, consumer habits have shifted from price to quality and convenience, as the consumption of healthy foods, in which fish play a prominent role, is increasingly prioritized. The article's primary goal is to map the characteristics of fish and fishery product consumption and identify the factors that influence consumers' preferences and decisions regarding the consumption of fish and fishery products. Using the PRISMA framework, articles published between 2000 and 2023 were selected with the help of Google Scholar, Web of Science, and Scopus. However, previous research related to the topic was also studied. The results show that consumer decisions are most influenced by factors impacting health and sensory attributes, production characteristics/peculiarities, and ease of preparation, that is, convenience.
