Retail price analysis of some fresh water fish products on the domestic market

This study analyses the retail prices of the main fresh water fish products such as live common carp, sliced common carp, sliced silver carp and African catfish fillet over a five year period (2007-2011). The variation in prices, distributions, deviations and correlations between the live and processed fish were investigated, as well as the promotions. The survey took place in Budapest Central Market Hall and in AUCHAN, CORA and TESCO hypermarket chains. It can be stated that the prices of fish products showed a smaller increase (22,8%) than other food products (26,3%) (Hungarian Central Statistical Office).
In the hypermarket chains the price of sliced product did not follow the processing losses. In traditional fish shops the sliced common carp was offered at lower prices (25%). Prices of sliced silver carp and African catfish varied in different ways. The silver carp was cheaper in traditional shops, unlike the African catfish that was sold in hypermarkets at lower prices. Standard deviations of fish product prices were more equilibrated in the case of hypermarkets. In promotion sales the share of live carp reached 33% in contrast to other products (19-25%).
